Care to share recipes for your signature dish?

I make fantastic desserts, but am realllly lacking in the main & side dish department. I'm sick of my dinner recipes and I'm sure my husband is too. Just looking for some inspiration to spice things up! I have plenty of chicken recipes (just thinking of chicken kind of makes both of us sick!), but I'd be really interested in some good easy oven or crock pot recipes. Some good suggestions for winter and light summer dishes please? I've got lots of cookbooks but the reason I'm asking you is because I'm looking for something that guests LOVE and request from you over and over again. I need to IMPRESS. ;-) THANK YOU!!
